美食台:吃廣東人煲的湯 三伏天不心慌!

今日大暑。
老話說,大暑老鴨勝補藥,喝老鴨湯是廣東人盛夏養生的方式。陳皮、薏米、紅棗、冬瓜皮和老鴨小火慢燉,只加鹽、糖簡單調味,清熱去火又鮮美。鴨肉還可以蘸上點料來吃,大補!
Today we usher in the solar term Dashu, or Great Heat. As an old Chinese saying goes, having old duck at Dashu is better than having tonic. Drinking old duck soup is a way of Cantonese to maintain health in the hottest days of summer. Dried orange peel, job tear’s seeds, red dates, wax gourd peel and old duck are stewed together over low heat and then seasoned with only salt and sugar. The finished soup is delicious and reduces inner heat. The duck meat can also be eaten with dipping sauce.
